Do you know you need to be eating lots of greens, but easily get bored of steamed kale and wilted spinach?
A delicious plate of something you actually want to eat is just a few key ingredients away.
You’re an ambitious person, and you know you need to feel your best to do your best work in the world…
… but sometimes you get stuck in a rut where vegetables stop tasting good and the only foods that appeal to you are carbs and cheese.
When green vegetables are the last thing you want to eat, and you just want to bathe in melted cheese, refer to this list for 10 ways to make your greens taste absolutely delicious – to eat alongside your melted cheese, of course (no restriction here):
1. Sautéed kale with caramelized onions, garlic, lemon, and grated parmesan.
2. Fresh baby spinach tossed in honey-lime vinaigrette with avocado, toasted pepitas, golden tomatoes, and fresh black pepper.
3. Broccolini sautéed in olive oil with melted leeks, a touch of pure maple syrup, cayenne pepper and slivered roasted almonds.
4. Brussels sprouts caramelized in the oven with grass-fed butter then tossed with crispy shallots and bacon.
5. Asparagus, grilled and topped with a poached egg, grated pecorino cheese, truffle oil, and black pepper.
6. Arugula salad with grilled peaches, fresh mozzarella, caramelized red onions, roasted walnuts, and white balsamic vinaigrette.
7. Celery with almond butter, raw honey, goji berries, and cacao nibs.
8. Swiss chard sautéed in olive oil with shiitake mushroom “bacon,” garlic, a touch of raw honey, and a sprinkle of cayenne pepper.
9. Collard greens, braised and then tossed with caramelized red onion, dried cherries, chili flakes, and crispy pancetta.
10. Mustard green salad with apple cider vinaigrette, pomegranate seeds, and toasted cashews.
It goes without saying that all of these get a sprinkle of good quality salt.
Yes, even the sweet celery option. Trust me.
If you haven’t been salting your greens, it’s like day and night, and makes them SO much tastier and more satisfying.
Plus, good salt balances blood sugar and improves absorption of minerals for optimal hydration, among many other benefits.
What’s your favorite green vegetable, and how do you like to eat it?

My favorite cool weather breakfast: heat up my home made bone broth (salted and seasoned to taste), toss in a handful of frozen organic greens, bring to a simmer and then stir in a pastured organic egg – instant and very healthy, nutritious, filling and warm breakfast!
Mmm so good! Love this too. And a super easy way to get in more greens. Thank you for sharing XO
