This is gonna be quick and dirty.
This isn’t a shiny Instagram moment or a golden opportunity for me to show off my recipe development skills or restaurant prowess. Don’t worry, they’re still intact, I’m just feeling the quick AND delicious meals today.
So on this glorious, rainy, kinda-warm-in-NYC Tuesday I’m sharing three of the QUICKEST and easiest meals I relish when my schedule is beautifully full – like, overflowing in the best way.
These meals satisfy me and absolutely thrill my type-A side with how fast and efficient they are. They take so little time that I can spend extra time enjoying them, chewing, and breathing. Plus, they’re filling and will keep you focused and energized for at least 3 hours.
Everything here can be bought at a grocery store like Whole Foods, and you can make swaps, like regular hummus instead of white bean-rosemary, for example…
MEAL 1
Cured salmon + sweet potato chips + black bean dip + naturally-fermented kimchi + arugula with olive oil, salt and pepper.
MEAL 2
Avocado toast on gluten-free or sourdough bread with pulled rotisserie chicken from the grocery store + radishes + sea salt + chili flakes + naturally-fermented sliced pickles.
MEAL 3
Smoked trout + your favorite whole grain or gluten-free crackers with olive oil mayo + cucumber, carrot and celery sticks + rosemary-white bean hummus + naturally-fermented sauerkraut.
I simply assemble these meals on a plate and create delicious bites with a little of each ingredient. You’ll notice a trend – there’s always a protein, complex carb, healthy fat, vegetable, and probiotic (naturally-fermented) ingredient.

I’m also LOVING high-quality boxed soups, like Pacific’s Organic line. If you have 5 minutes to throw a cup on the stove, you could add a warming bowl of soup to any of these meals.
