OMG, one of my favorite meals EVER is shrimp tacos and passion fruit margaritas, specifically in Puerto Viejo, Costa Rica. But not just any shrimp tacos. Perfectly tender, slightly crispy seared shrimp with a crunchy, pickled slaw and creamy aioli. And of course, avocado or guacamole. Drool.
I’m back in Costa Rica right now at the Unf*ckwithable Girlfriends retreat with Ash Ambirge (one of my mentors), and 20 of the most badass women I’ve ever met.
I’ve been hanging out in a luxury villa (with an infinity pool, and private chefs, and in-house masseuses…), eating the best food ever. So, I figured it was the perfect time to share my fav recipe for shrimp tacos with chipotle aioli with you.

Shrimp Tacos with Chipotle Aioli
Serves 2
Ingredients
½ lb shrimp, peeled and deveined
½ head red cabbage
1 chipotle pepper, in sauce
1/4 cup high-quality or homemade aioli
1 avocado
2 T apple cider vinegar
1 t honey
Safflower oil
Sea salt
Black pepper
Method
Thinly slice cabbage and combine with apple cider vinegar, 1 t honey, and sea salt to taste. Allow to pickle for 15 minutes, or as long as you have.
Blend your chipotle pepper with your high-quality or homemade aioli (essentially mayo).
Peel and devein your shrimp. Bring 1 T safflower oil or other high smoke point oil to high heat and sear your shrimp off for 2-3 minutes on each side until cooked through, depending on size. Sprinkle each side with salt and pepper while cooking.
Warm your tortillas in a dry pan, then assemble your tacos by layering the shrimp, then slaw, then aioli on top. Add avocado slices or guacamole and a little sprinkle of salt.
