Serves 2

Ingredients
2 large egg yolks
1/2 cup melted vegan butter, such as Earth Balance
1 teaspoon lemon juice
1-2 teaspoons minced thyme
Fine Himalayan salt, to taste
Fine white pepper, to taste

Method
Melt vegan butter in small pot. Turn off heat and keep nearby.

Separate yolks from whites and place only yolks in medium bowl. Beat vigorously with whisk until fluffy and frothy.

Add two inches water to medium pot and bring to a boil. Reduce to a very low simmer.

Set the bowl with yolks over the pot, creating a double boiler. Add melted vegan butter a little bit at a time, continuously whisking. If mixture starts to coagulate, use an oven mitt to remove bowl from heat for a little while, continuously stirring.

The heat must be very low to keep the yolks from scrambling. Continuous stirring and heat management is key.

After all vegan butter has been added, add your lemon juice, thyme, salt, and white pepper. Whisk vigorously.

Serve immediately over poached eggs.
