How To Come Back Quick When You Feel Down

img_1363Since healing from my eating disorder, gaining weight, and losing weight, the thing I’m most proud of is not that I’m perfectly intuitive and aligned in my food and life choices 100% of the time (cause, well, I’m not)…

The thing I’m most proud of is my comeback rate.

Aka, how quickly I’m able to feel better when I sense something is off.

Whether I’m feeling physically or mentally blah or gross or kinda sad, I know what I need to do to revive myself.

These days, I rarely feel “off” for more than a day or two before bringing myself back into balance and getting back to at least 90%.

When I’m feeling depleted, heavy, bloated, or anxious, there’s one ritual that speeds up my comeback rate by at least 75% every time, and it only takes about 10 minutes to do….

It’s Breakfast Soup.

Soup for breakfast. Soup with eggs in it. Warm and nourishing, and the perfect way to jumpstart your digestion, get energized, and balance your mood in the morning. Some people reach for coffee, I reach for soup (and then coffee afterward, sometimes).

If you already have some leftover soup, this quick non-recipe recipe only takes 10 minutes…

Here’s what you need for 1 person…

  • 1 serving of your favorite soup – I used tomato kale in the photo above
  • 2 whole eggs
  • 1-2 oz goat cheese (skip this if you’re feeling congested, coughing and sneezing, or just know you’re sensitive to dairy)
  • Arugula or basil
  • Sourdough bread
  • Grass-fed butter
  • Olive oil
  • Salt and pepper
  • Chili flakes

And here’s how you make it…

1. Transfer your soup to a small pot and bring it to a gentle boil.

2. Reduce to a simmer and crack your two eggs right in there. Cook for 3 minutes, then cover and cook for 3 more minutes, or however long you usually like to cook your poached eggs.

3. While that’s happening, toast your sourdough bread, butter it up, and slice into “soldiers,” as pictured.

4. Once eggs are cooked to your liking, transfer them to a bowl and top with goat cheese (again, optional), olive oil, salt and pepper, chili flakes, and a little arugula or basil.

5. Serve with toast on the side. I love dipping!

So easy, right?! And you’re going to have the best day ever after this breakfast.

After I eat Breakfast Soup, I feel calm, centered, light, and engaged with life, rather than just going through the motions.

Why? Because the digestive system is like a fire and it needs warm food to do its job properly – especially in the morning, after being inactive all night. Hitting it with an iced latte or cold smoothie (unless it’s super hot outside) is an easy way to feel scattered and frazzled quick. Soup is the ultimate way to supercharge yourself first thing in the morning.

When your digestive system is running right, your skin is clear and your mood is positive. Your skin is a direct reflection of your gut and hormonal health, and 95% of our serotonin lives in the gut, which explains why nurturing it makes us feel emotionally happy. Getting things moving in the morning also relieves bloating and supports weight loss. Win-win-win-win. 🙂

As we transition into the colder weather here on the East Coast – and especially in New York City and other super cold areas – it’s important to take extra care to nourish yourself, both physically and mentally.

Start tomorrow morning with this simple step – it only takes 10 minutes and it’s SO worth it.

Sending you warm hugs,
Lula

  1. Great recipe idea, Lula. I sometimes make oat and chia porridge, and add a couple of beaten eggs, then top it with a sliced avocado, but this soup idea sounds delicious 🙂

  2. This sounds great – do you have any suggestions on how this could be adapted if you have to eat breakfast at your desk at work? I have access to a microwave but not a stove.
    Thank you!!

    1. Yes! I messaged you about this but in case others are wondering, I think it will work to just follow directions for poaching eggs in the microwave but use the soup instead of water. Enjoy love! xo
